Chickpea and chorizo stew
This traditional recipe is a quick, easy and very tasty comfort food - perfect for Canadian cold winter nights!
🍲Ingredients (for 4 people):
1 onion, diced
1 garlic clove, diced
1 bay leaf
About 100g IBERIAN ACORN-FED CHORIZO, cut into small pieces
1 jar MAS VELL ORGANIC PEDROSILLANO CHICKPEAS, drained
2 medium-sized potatoes, peeled and roughly cut into pieces
LAS VALDESAS ARBEQUINA EXTRA VIRGIN OLIVE OIL
salt to taste
🍲Instructions:
Heat up a good drizzle of olive oil and sauté the onion and garlic for a few minutes, until just golden brown.
Add the chorizo and mix for a few minutes, to allow the chorizo to heat up and start to release all the lovely Iberian flavours.
Add the drained chickpeas, potatoes, bay leaf, and salt to taste, and cover with water.
Let it simmer until the potatoes are nice and soft, adding more water if needed.
Serve with some sweet paprika flakes for an extra flavourful touch!
